This meal is undoubtedly one of my favorite easy dishes. It really came about because I was trying to put a unique spin on my popular creamy chicken stew recipe. And this one-pot meal is the perfect way to do it.

The chicken is perfectly seasoned and incredibly flavorful (you can add a touch of melted butter with a small brush for that extra crispy golden color). And the sauce takes just a few minutes to whip up.

I urge you to serve this dish with some baked potatoes on the side. Spooning that delicious sauce over hot, fluffy baked potatoes is truly a heavenly experience. Your family will definitely be requesting this often! Want to take it over the top? Sprinkle some crispy bacon bits on top before serving!

Slice each chicken breast into approximately 1/2-inch thick 2-3 strips. Add Italian seasoning, salt, and black pepper. Spread a pat of melted butter on one side of each piece and sauté in olive oil for about 4-5 minutes on each side until golden brown. Set aside.

Combine the sauce ingredients in a medium heat-safe bowl. Let it simmer slowly for about 5 minutes.

Place the chicken back in the skillet and spoon the sauce over it. Partially cover and simmer for 10 minutes on low heat. Serve with seasoned or baked potatoes and vegetables.

Pro Tips

  • For an extra indulgence, try melting some cheese on top of the chicken and/or baked potatoes before serving.
  • Crispy crumbled bacon is also a fantastic addition on top!
  • You can also toss the cooked vegetables in the sauce. Just add them when you add the other sauce ingredients and give them enough time to warm up before adding the chicken.
  • Brushing the chicken with melted butter not only enhances the flavor but also adds a beautiful golden crust. I prefer to brush it directly onto the chicken rather than melting it in the pan. This way, the chicken stays moist and won't burn in the pan.
  • If using smaller chicken breasts, consider using 3-4 instead of 2 large ones.

Storage

  • Store in an airtight container and refrigerate for up to 3 days or freeze for up to 3 months.
  • It reheats wonderfully, and you can easily pair it with reheated baked potatoes and/or veggies for a quick microwavable lunch or dinner.
