But it's said that this recipe is so amazing that if you make it for your partner, they'll fall in love with your cooking skills and might propose immediately because the way to a man's heart is through his stomach, isn't it? Sounds good to hear, doesn't it? So let's cook!
How to Make Mary Me Chicken?
This is a very easy recipe and takes you less than 30 minutes, so even if you haven't planned a dinner date beforehand, you can still make it as long as you have all the ingredients on hand.
You'll need the following:
Chicken breast - cut into cutlets. You really have to thin them out to achieve that crispy, golden crust. If you use whole chicken breasts, make sure to finish them in the oven to ensure they're cooked through. But I prefer cutlets in this recipe.
Flour, salt, and black pepper - you'll coat the chicken in flour to achieve that beautiful golden and crispy crust.
Olive oil and butter - I use a combination of olive oil and butter to brown the chicken. You can also use sun-dried tomato oil for extra flavor.
Garlic - because it makes everything better!
Chicken or vegetable stock - I recommend using chicken stock, but if you only have vegetable stock, it works well too.
Heavy cream and Parmesan cheese - for a super creamy and flavorful sauce. Don't use light or low-fat cream, as it won't thicken the sauce properly.
Pepper flakes, dried oregano, and oregano leaves - for extra flavor.
Sun-dried tomatoes - what makes this dish so special!
Fresh basil leaves - for garnish.
Coat the chicken in seasoned flour and shake off the excess. Heat oil in a heavy skillet over medium heat and melt butter. Brown the chicken on both sides until it's golden and crispy, then remove it to a plate, cover, and set aside.
Saute garlic for about a minute or until fragrant. Add chicken stock and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Add the cream and Parmesan cheese to the pan. Let the sauce simmer for a few minutes to thicken, then add the red pepper flakes and dried oregano.

Most supermarkets offer chicken cutlets/steaks, but you can cut chicken breasts in half and achieve the same result. When sautéing garlic, adding a bit of oil from sun-dried tomatoes enhances the flavor. Avoid using single/light cream as it won't thicken the sauce sufficiently. I suggest buying a block of Parmesan cheese and grating it yourself for better flavor. Store-bought grated Parmesan doesn't have the same depth of flavor and doesn't melt as well in the sauce.
Storage Tips
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven, and if the sauce has thickened in the fridge, you might need to add a splash of water to thin it out again.
I don't recommend freezing the creamy sauce as it might separate upon thawing.
